鯖魚是高營養的深海魚。因為運輸距離短,英國的大西洋鯖魚生長在寒冷深海,魚體為了保暖會儲存極多油脂,具有標誌性的「老虎斑紋」。新鮮鯖魚雙眼清澈明亮、瞳孔透亮有神、魚鰓呈現鮮紅色,魚身緊實有彈性,表面黏液乾淨無異味。

處理新鮮鯖魚的「去腥關鍵」:鯖魚油脂豐富,但也比一般白肉魚更有魚腥味。

徹底清洗血線:切開魚腹後,脊椎骨下方有一條紅黑色的「血線」,必須用清水或刷子完全沖洗乾淨,這是主要的腥味來源。

鹽漬脫水法:下鍋烹調前,先在魚身雙面抹上鹽靜置 10 分鐘,讓其排出多餘的帶腥水分,隨後用廚房紙巾徹底擦乾再烹調。
