螄蚶的煮法
材料
螄蚶:1kg
薑片:適量
蒜頭:適量
辣椒(可選):適量
青蔥:適量
米酒:2大匙
鹽:適量
白胡椒粉:適量
香油:少許
 
做法
1. 清洗螄蚶:將螄蚶放入鹽水中浸泡約4至6小時,讓它們吐沙。期間可換水幾次。
2. 準備香料:切好薑片、蒜頭、辣椒和青蔥。
3. 炒香料:在鍋中加入少許油,先將薑片和蒜頭炒香。
4. 加入螄蚶:將螄蚶加入鍋中,並迅速加入米酒。
5. 加調味料:撒上適量的鹽和白胡椒粉。
6. 煮至開口:蓋上鍋蓋,用中火煮至螄蚶開口。大約需要3至5分鐘。
7. 加入青蔥和辣椒:當螄蚶幾乎都開口時,加入青蔥和辣椒,快速拌炒均勻。
8. 起鍋前加香油:最後滴入少許香油增香,然後即可起鍋。
