Cooking Method for Cockle Clams
Ingredients:
Cockle Clams: 1kg
Ginger slices: As needed
Garlic: As needed
Chili (optional): As needed
Green onions: As needed
Rice wine: 2 tablespoons
Salt: As needed
White pepper powder: As needed
Sesame oil: A little
Method:
Clean the Cockle Clams: Soak the clams in saltwater for about 4 to 6 hours to let them spit out the sand. Change the water a few times during this period.
Prepare the aromatics: Slice ginger, garlic, chili, and green onions.
Fry the aromatics: Add a little oil to a pan and fry the ginger and garlic until fragrant.
Add the Cockle Clams: Put the clams into the pan and quickly add the rice wine.
Add seasonings: Sprinkle a suitable amount of salt and white pepper powder.
Cook until they open: Cover the pan and cook on medium heat until the clams open, which should take about 3 to 5 minutes.
Add green onions and chili: When the clams are almost all open, add green onions and chili, and quickly stir-fry evenly.
Add sesame oil before serving: Drizzle a little sesame oil for added fragrance before serving.
